This pasta dish is wonderful for fast, fresh cooking. It is very easy to substitute the ingredients for items that you have in season or around the house. I love extra onions and basil in everything, so we always add extra, and I tend to add some more red pepper flakes or cayenne pepper to mine. The recipe does not come with meat, but chicken would be great with this!
ONE PAN PASTA
12oz linguine
12oz cherry tomatoes, halved
1 onion, sliced thinly
4 cloves garlic, thinly sliced
1/2 tsp red pepper flakes
2 sprigs basil, plus extra for garnish
2 Tbl olive oil
salt & pepper to taste
4 1/2 c water
parmesan cheese for serving
Add all ingredients to a pot, and bring water to a boil. Boil over high heat until pasta is al dente, stirring frequently. There should be a little bit of water remaining for sauce. Season and garnish to taste.

Why I Started Couponing
I started couponing as a way to lower our expenses in May 2011, and yes, I started because I saw an episode of Extreme Couponing. I thought that if these crazy people were actually able to save some money and buy a huge amount of products, that I would be able to at least save 10% of my current spending. I had no idea that I was releasing a monster. The first 3 months were a little frustrating and exciting. I was spending the same amount of money, but I was purchasing about 6 times as many products as before. Our one bedroom apartment quickly became overrun with toothpaste (I am still not allowed to buy ANY toothpaste unless it is a moneymaker, but more on that later). I was rushing to every store in a 15 mile radius, and not saving any money. I became stressed out over getting coupons, and whenever a store did not have an item in stock, I would get very angry with the store. I started reading online about how to really extreme coupon, not like what the show publicizes. I found out that I did not have to get every deal, and that a healthy stockpile is built up over time (the BEST advice I have ever received about couponing). I began to look for ways to lower our expenses, not just buy more items. I found that I was able to reduce our spending by 50% within the first 6 months, and unless I can save 90% on the purchase price of just about anything, I will not buy it. Many people tell me that they feel that couponing is buying a bunch of crap that they will not use, or it is for hoarders, or they do not have time for it. I can say that I have never donated more items, not had to go shopping last minute for that one ingredient, or not had a way to squeeze in an extra couple of hours over the week for couponing. The more time that a person puts in, the more money that they will save. If you want to cut your expenses by 10%, then grab your coupons during your favorite episode of True Blood. If you want to save 50%, then plan on clipping during the few movies during the week. There is always time to save money! I used an Excel spreadsheet to track and budget every penny of our expenses for 12 months, and we were able to get our expenses (household items/donation items/food items/etc) down to $30 a month for $1300 worth of products, and I can help you to do the same! Because of couponing, we have been able to save thousands of dollars, and drastically changed our finances forever. You must be patient with yourself, as there is a learning curve, and you must decide how much time you are willing to put in, based on how much you would like to save. My favorite recipe: Slow Cooker Chili
This is my favorite recipe by far, as it is so simple, and tastes so amazing. I usually modify some of the ingredients to fit whatever I have on hand, and I love adding sour cream, diced onions, and cheese (unless you are strange, and do not like cheese). If I use seasoned beans, I do not drain them, as I find that it adds lots of flavor. I make this in a slow cooker, but if you do not have a slow cooker, you can use the oven for 8 hours at 250 in a casserole dish or dutch oven. I always make enough to freeze leftovers for another night!
2 large onions, diced
5 cloves garlic, minced
2 bell peppers, diced
2 14oz cans beans, drained
1 14oz can diced tomatoes
2 jalapenos, seeded & minced
1 Tbl cumin
1 tsp cayenne pepper
1/2 c beef broth
Add all ingredients to slow cooker, and cook on high for 4 hours, or low for 8 hours.
Slow Cooker Chili
2-3lbs ground beef, cooked & drained2 large onions, diced
5 cloves garlic, minced
2 bell peppers, diced
2 14oz cans beans, drained
1 14oz can diced tomatoes
2 jalapenos, seeded & minced
1 Tbl cumin
1 tsp cayenne pepper
1/2 c beef broth

The purpose of this blog
Many of my family and friends have been asking me for recipes and tips and tricks about couponing. I wanted to have a place where I could post the different foods that I have been cooking, as well as the different ways that I have been saving money. I have accumulated a bunch of recipes over the past few years from friends, family, magazines, websites, random scraps of paper that I have found, etc. (sorry if I don't remember where I got the recipe from and don't give you credit...but I obviously enjoyed it!), and I would love to share my favorites. Please let me know if you have any favorites that you would like to share (hopefully I can get my sister to give me some of her amazing baking secrets for here as well). I would also like to share my feelings on couponing and living frugally, and how I feel that everyone can drastically improve their lives by implementing some of my techniques.
