Freezer Cooking: Orange Teriyaki Chicken

I enjoy coming home and not having to worry about what to make for dinner. I think that is why I love freezer cooking so much; the last thing that I want to do after I come home is to fuss over dinner. This recipe uses canned frozen orange juice concentrate, which makes the chicken sweet and moist, and really packs a flavor punch!

ORANGE TERIYAKI CHICKEN

1/4 c soy sauce
3 Tbl diced onion
2 minced cloves garlic
1 Tbl olive oil
1/2 tsp pepper
1/2 tsp ginger
1/2 tsp red pepper sauce
1 6 ounce can orange juice concentrate
8 chicken breasts

COOKING DAY:
Combine all ingredients in a freezer bag. Label and freeze.


EATING DAY:
Thaw overnight in the refrigerator. Bake at 350F for 35-45 minutes until cooked through.

I made this recipe with drumsticks, and I like to serve it over a bed of rice for the saucey amazingness to flavor everything else. As always, extra garlic could be added to this recipe for an extra kick of awesome. Enjoy!
